Baked Chicken Breast Dinner

4 boneless skinless chicken breasts (about 6 ounces each)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups broccoli florets
2 medium carrots, peeled and sliced
1 medium red bell pepper, sliced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

Preheat the oven to 400°F (200°C).
Place the chicken breasts on a baking sheet lined with parchment paper or lightly greased.
In a small bowl, combine 2 tablespoons olive oil, garlic powder, paprika, dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
Brush the seasoning mixture evenly over both sides of each chicken breast.
In a separate bowl, toss broccoli florets, sliced carrots, and sliced red bell pepper with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well coated.
Arrange the vegetables around the chicken breasts on the baking sheet in a single layer.
Bake in the preheated oven for 20 to 25 minutes, or until the chicken breasts reach an internal temperature of 165°F (74°C) and the vegetables are tender.
Remove from the oven and let the chicken rest for 5 minutes before serving.
