One Pot Lachs Spinat (Salmon and Spinach)

A simple and delicious one pot meal featuring tender salmon fillets cooked with fresh spinach and aromatic garlic in a creamy sauce. Perfect for a quick and healthy dinner.

2 salmon fillets (about 150 grams each), skin removed
200 grams fresh spinach, washed and roughly chopped
2 cloves garlic, minced
1 small onion, finely chopped
200 milliliters heavy cream
100 milliliters vegetable or chicken broth
1 tablespoon olive oil
1 teaspoon lemon juice
Salt, to taste
Black pepper, to taste

Instructions

Heat the olive oil in a large deep skillet or pot over medium heat.
Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes until softened and fragrant.
Pour in the vegetable or chicken broth and bring to a simmer.
Add the fresh spinach to the pot and cook, stirring occasionally, until wilted, about 3-4 minutes.
Pour in the heavy cream and stir to combine. Season with salt and black pepper to taste.
Place the salmon fillets on top of the spinach and cream mixture.
Cover the pot with a lid and cook for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove the lid and drizzle the lemon juice over the salmon and spinach mixture.
Gently stir to combine and adjust seasoning if needed.
Serve the one pot lachs spinat hot, garnished with additional black pepper if desired.
