Toddler-Friendly Ground Beef Dinner

A simple, nutritious, and toddler-friendly ground beef dinner featuring soft vegetables and mild seasoning, perfect for little ones.

1 pound ground beef
1 medium carrot, peeled and finely diced
1 small zucchini, finely diced
1/2 cup frozen peas
1/4 cup finely chopped onion
1 clove garlic, minced
1/2 cup low-sodium beef broth
1 tablespoon olive oil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon salt
1 cup cooked soft rice or small pasta (such as orzo or small shells)

Instructions

Heat olive oil in a large skillet over medium heat.
Add finely chopped onion and minced garlic to the skillet and cook for 2-3 minutes until softened.
Add ground beef to the skillet and cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes.
Add finely diced carrot and zucchini to the skillet and cook for 5 minutes until vegetables are tender.
Stir in frozen peas, dried thyme, dried oregano, black pepper, and salt.
Pour in the low-sodium beef broth and simmer for 5 minutes until the mixture is heated through and slightly thickened.
Add the cooked soft rice or small pasta to the skillet and stir to combine.
Remove from heat and allow to cool slightly before serving to toddlers.
