Cheesy Chicken Broccoli Rice Casserole

A comforting and hearty casserole featuring tender chicken, nutritious broccoli, fluffy rice, and a rich, cheesy sauce. Perfect for a family dinner or meal prep.

2 cups cooked white rice
2 cups cooked chicken breast, shredded
3 cups fresh broccoli florets
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 can (10.5 ounces) condensed cream of chicken soup
1 cup sour cream
1/2 cup milk
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter, melted

Instructions

Preheat the oven to 350°F (175°C).
Steam the broccoli florets until tender but still crisp, about 4-5 minutes. Drain and set aside.
In a large mixing bowl, combine the cooked rice, shredded chicken, steamed broccoli, shredded cheddar cheese, shredded mozzarella cheese, and grated Parmesan cheese.
In a separate bowl, whisk together the condensed cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper until smooth.
Pour the soup mixture over the rice and chicken mixture. Stir well to combine all ingredients evenly.
Transfer the mixture into a greased 9×13-inch baking dish. Spread evenly.
Drizzle the melted butter over the top of the casserole.
Bake uncovered in the preheated oven for 35-40 minutes, or until the casserole is bubbly and the top is golden brown.
Remove from the oven and let it rest for 5 minutes before serving.
