1.5 pounds baby red potatoes, halved
1 pound smoked sausage, sliced into 1/2-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow bell pepper, cut into 1-inch pieces
1 medium red onion, cut into wedges
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby red potatoes, sliced smoked sausage, red bell pepper pieces, yellow bell pepper pieces, and red onion wedges.
