A quick and flavorful Ground Turkey Teriyaki Stir Fry packed with vegetables and a homemade teriyaki sauce. Perfect for a healthy weeknight dinner.
1 tablespoon vegetable oil
1 pound ground turkey
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1 cup broccoli florets
1 medium carrot, julienned
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup low sodium soy sauce
2 tablespoons honey
2 tablespoons water
1 tablespoon rice vinegar
1 teaspoon cornstarch
2 green onions, sliced
1 tablespoon toasted sesame seeds
In a small bowl, whisk together soy sauce, honey, water, rice vinegar, and cornstarch until smooth. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add ground turkey to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
Add minced garlic and grated ginger to the skillet with the turkey and cook for 1 minute until fragrant.
Add sliced red and yellow bell peppers, broccoli florets, and julienned carrot to the skillet. Stir fry for 4-5 minutes until vegetables are tender-crisp.
Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to coat everything evenly.
Cook for an additional 2-3 minutes until the sauce thickens and glazes the stir fry.
Remove from heat and garnish with sliced green onions and toasted sesame seeds before serving.
