Air Fryer Chicken Breast Dinner

A quick and healthy air fryer chicken breast dinner featuring juicy, seasoned chicken breasts cooked to perfection, served with roasted vegetables for a complete meal.

2 boneless skinless chicken breasts (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium zucchini, cut into 1/2-inch thick rounds
1 medium red bell pepper, cut into 1-inch pieces
1 cup baby carrots
1 tablespoon olive oil (for vegetables)
1/4 teaspoon salt (for vegetables)
1/4 teaspoon black pepper (for vegetables)

Instructions

Preheat the air fryer to 375°F (190°C) for 5 minutes.
Pat the chicken breasts dry with paper towels.
In a small bowl, mix together 1 tablespoon olive oil, garlic powder, smoked paprika, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
Brush the seasoning mixture evenly over both sides of the chicken breasts.
In a separate bowl, toss the zucchini rounds, red bell pepper pieces, and baby carrots with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well coated.
Place the seasoned chicken breasts in the air fryer basket in a single layer.
Arrange the seasoned vegetables around the chicken breasts in the basket.
Cook in the air fryer at 375°F (190°C) for 18 minutes, flipping the chicken breasts and stirring the vegetables halfway through the cooking time.
Check the internal temperature of the chicken breasts with a meat thermometer; it should read 165°F (74°C). If not, cook for an additional 2-3 minutes and check again.
Remove the chicken breasts and vegetables from the air fryer and let the chicken rest for 3 minutes before serving.
