1 cup long grain white rice
2 cups water
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil, divided
2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium cucumber, diced
1 cup cherry tomatoes, halved
1/2 small red onion, thinly sliced
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/2 cup plain Greek yogurt
1 tablespoon fresh lemon juice
1 small garlic clove, minced
Salt to taste (for tzatziki)
Black pepper to taste (for tzatziki)
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat.
Once boiling, reduce heat to low, cover, and simmer for 18 minutes or until the rice is tender and water is absorbed.
Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork before serving.
In a medium bowl, combine the chicken pieces with 1 tablespoon olive oil, dried oregano, garlic powder, paprika, salt, and black pepper. Toss to coat evenly.
Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat.
