A quick and flavorful Air Fryer Shrimp Fajita Bowl featuring perfectly seasoned shrimp, sautéed bell peppers and onions, served over fluffy rice for a delicious and healthy meal.
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil, divided
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
2 cups cooked white rice
1 lime, cut into wedges
1/4 cup fresh cilantro leaves, chopped
Preheat the air fryer to 400°F (200°C).
In a medium bowl, combine the chili powder, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper.
Add the shrimp to the bowl and drizzle with 1/2 tablespoon olive oil. Toss to coat the shrimp evenly with the seasoning mixture.
Place the seasoned shrimp in the air fryer basket in a single layer. Cook for 6 minutes, shaking the basket halfway through cooking.
While the shrimp cooks, heat the remaining 1/2 tablespoon olive oil in a large skillet over medium heat.
Add the sliced red bell pepper, green bell pepper, and yellow onion to the skillet. Sauté for 6-8 minutes until the vegetables are tender and slightly caramelized.
Divide the cooked rice evenly among four bowls.
Top each bowl of rice with sautéed peppers and onions, then evenly distribute the cooked shrimp on top.
