Apple Cake Oats

1 cup rolled oats
2 cups water
1 medium apple, peeled, cored, and diced
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brown sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup chopped walnuts
2 tablespoons milk

Instructions

In a medium saucepan, bring 2 cups of water to a boil.
Add 1 cup of rolled oats, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg to the boiling water.
Reduce heat to medium-low and cook the oats, stirring occasionally, for 5 minutes.
Add the diced apple and 2 tablespoons of brown sugar to the oats and continue cooking for another 5 minutes, stirring frequently, until the oats are soft and the apples are tender.
Remove the saucepan from heat and stir in 1 teaspoon vanilla extract and 2 tablespoons milk.
Divide the apple cake oats into two bowls and top each with 2 tablespoons of chopped walnuts.
Serve warm.
