1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 cups peeled and diced apples
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
1/4 cup caramel sauce (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs and vanilla extract to the butter mixture and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In another bowl, toss the diced apples with cinnamon, nutmeg, and lemon juice.
Fold the apple mixture into the cookie dough until evenly distributed.
Spread the dough evenly into the prepared baking pan.
Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
