3 ripe bananas, mashed
1/4 cup unsweetened applesauce
1/4 cup whole milk
1 large egg
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
In a large bowl, combine the mashed bananas, unsweetened applesauce, whole milk, egg, and vanilla extract. Mix well until smooth.
In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
Add the dry ingredients to the wet ingredients and gently fold until just combined. Do not overmix.
Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.
