  • 1 cup corn starch
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup lettuce, shredded
  • 1 cup carrots, julienned
  • 1 cup cucumber, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, season the diced chicken with salt and pepper.
  3. Dredge the chicken pieces in corn starch, then dip in beaten eggs, and finally coat with panko breadcrumbs.
  4. Place the coated chicken on a baking sheet and bake for 20-25 minutes until golden and crispy.
  5. In a separate bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
  6. Assemble the bowl by placing shredded lettuce at the bottom, followed by the baked chicken, carrots, cucumber, and green onions.
  7. Drizzle the Bang Bang sauce over the top and serve immediately.
