  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup rice
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the carrots, potatoes, tomato paste, thyme, salt, and pepper.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  7. In a separate pot, cook the rice according to package instructions.
  8. Serve the beef stew over the cooked rice.
