Black Magic Chocolate Cheesecake

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Stir in sour cream and melted chocolate chips until fully combined.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use dark chocolate chips.
  • Serve with whipped cream or chocolate ganache on top.
