BLUEBERRY BANANA STREUSEL EGGNOG BREAD

A delightful bread combining the flavors of blueberry, banana, and eggnog, topped with a crunchy streusel.

  • 2 ripe bananas, mashed
  • 1 cup fresh blueberries
  • 1/2 cup eggnog
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup flour (for streusel)
  • 1/4 teaspoon cinnamon (for streusel)
  • 2 tablespoons cold butter (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, eggnog, vegetable oil, sugar, and vanilla extract until well combined.
  3. In another bowl, whisk together the baking powder, baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the blueberries gently.
  6. In a separate bowl, prepare the streusel by combining brown sugar, flour, cinnamon, and cold butter until crumbly.
  7. Pour the batter into the prepared loaf pan and sprinkle the streusel on top.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Ensure bananas are very ripe for the best flavor.
  • Can substitute frozen blueberries if fresh are not available.
  • Store leftovers in an airtight container for up to 3 days.
