Caprese Chickpea Salad with Roasted Garlic Basil Dressing

A refreshing and nutritious salad featuring chickpeas, fresh mozzarella, tomatoes, and a roasted garlic basil dressing.

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 1 head garlic, roasted
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the head of garlic in aluminum foil and roast for 30-35 minutes until soft.
  3. In a large bowl, combine chickpeas, cherry tomatoes, mozzarella, and basil.
  4. In a blender, combine roasted garlic, olive oil, balsamic vinegar, salt, and pepper. Blend until smooth.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
