Cheesecake Stuffed Halloween Cupcakes

  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/4 cup orange food coloring
  • Halloween-themed sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Prepare the chocolate cake mix according to package instructions.
  3. Fill each cupcake liner halfway with the cake batter.
  4. In a separate bowl, beat together cream cheese, sugar, and vanilla until smooth.
  5. Drop a spoonful of the cheesecake mixture into the center of each cupcake.
  6. Top with remaining cake batter to cover the cheesecake filling.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool completely before frosting.
  9. Mix powdered sugar with orange food coloring to create frosting.
  10. Frost the cooled cupcakes and decorate with Halloween sprinkles.
