  • 4 chicken thighs, bone-in and skin-on
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 tablespoon capers
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken thighs, skin-side down, and cook until browned, about 5-7 minutes.
  4. Flip the chicken and add the chopped onion and minced garlic to the skillet.
  5. Cook for another 3-4 minutes until the onion is translucent.

  7. Bring to a simmer, cover, and cook for 30-35 minutes until the chicken is cooked through.
  8. Remove the lid and let the sauce reduce for an additional 5-10 minutes.
  9. Serve hot, garnished with fresh parsley.
