4 chicken thighs, bone-in and skin-on
Salt and pepper to taste
2 tablespoons olive oil
1 onion, chopped
4 cloves garlic, minced
1 cup white wine
1 cup chicken broth
1 tablespoon capers
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped
Instructions
Season the chicken thighs with salt and pepper.
In a large skillet, heat olive oil over medium-high heat.
Add the chicken thighs, skin-side down, and cook until browned, about 5-7 minutes.
Flip the chicken and add the chopped onion and minced garlic to the skillet.
Cook for another 3-4 minutes until the onion is translucent.
Pour in the white wine and chicken broth, then add the capers and herbs.
Bring to a simmer, cover, and cook for 30-35 minutes until the chicken is cooked through.
Remove the lid and let the sauce reduce for an additional 5-10 minutes.
Serve hot, garnished with fresh parsley.

For a richer flavor, use homemade chicken broth.
