1 lb chicken breast, diced
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 cup marinara sauce
1/2 cup mozzarella cheese, shredded
2 eggs, beaten
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Olive oil for frying
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
Dip each piece of chicken into the beaten eggs, then coat with the breadcrumb mixture.
Heat olive oil in a skillet over medium heat and fry the chicken bites until golden brown on all sides.
Transfer the fried chicken bites to a baking dish and top with marinara sauce and mozzarella cheese.
Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
Serve hot with extra marinara sauce on the side.
Notes
For a healthier version, bake the chicken bites instead of frying.
