  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in flour and cook for 1-2 minutes.
  5. Add chicken broth, potatoes, thyme, and rosemary; bring to a boil.
