A flavorful and zesty Cilantro Lime Chicken recipe featuring tender chicken breasts marinated in fresh lime juice, cilantro, garlic, and spices, then grilled to perfection.
4 boneless, skinless chicken breasts (about 6 ounces each)
1/4 cup fresh lime juice (about 2 limes)
1/4 cup chopped fresh cilantro leaves
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
In a medium bowl, whisk together lime juice, chopped cilantro, minced garlic, olive oil, ground cumin, chili powder, salt, and black pepper to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken, ensuring all pieces are coated evenly.
Seal the bag or cover the dish and refrigerate for at least 15 minutes and up to 2 hours to marinate.
Preheat a grill or grill pan over medium-high heat.
Remove the chicken from the marinade and discard the marinade.
Grill the chicken breasts for 6 to 8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before serving.
