  • 2 cups of jasmine rice
  • 1 lb chicken breast, diced
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, cook the rice according to package instructions and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat.
  4. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
  5. Add the diced chicken to the skillet and cook until browned.
  6. Stir in the curry powder and cook for another minute.
  7. Pour in the coconut milk and bring to a simmer.
