1 lb large shrimp, peeled and deveined
1 cup shredded coconut
1 cup panko breadcrumbs
2 eggs, beaten
1 cup all-purpose flour
1 ripe mango, peeled and diced
1 tablespoon lime juice
1 tablespoon honey
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.
Season the shrimp with salt and pepper.
Dredge each shrimp in flour, dip in the egg, and then coat with the coconut-panko mixture.
Place the breaded shrimp on a baking sheet lined with parchment paper.
