  • 1 cup fresh cranberries
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cups vegetable broth
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups cubed bread (preferably whole grain)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté the onion and celery until softened.
  3. Add the diced butternut squash and cook until tender.
  4. Stir in the cranberries, vegetable broth, sage, thyme, salt, and pepper.
  5. Mix in the cubed bread and parsley until well combined.
  6. Transfer the mixture to a baking dish and cover with foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until golden brown.
