Ingredients

Scale

4 (6-ounce) salmon fillets, skin on
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/2 cup unsalted butter, melted
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard

Instructions

Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with foil.
In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.
Pat the salmon fillets dry with paper towels. Sprinkle the spice mixture evenly over both sides of each salmon fillet.
Place the salmon fillets skin-side down on the grill grates or on the prepared baking sheet.
In another bowl, whisk together the melted butter, minced garlic, chopped parsley, chopped chives, lemon juice, Worcestershire sauce, and Dijon mustard until well combined.
Brush half of the cowboy butter sauce generously over the salmon fillets.
Grill the salmon for about 10-12 minutes or bake in the oven for 12-15 minutes, until the salmon is cooked through and flakes easily with a fork.
During the last 2 minutes of cooking, brush the remaining cowboy butter sauce over the salmon fillets for extra flavor.
Remove the salmon from the heat and let it rest for 2 minutes before serving.
Serve the Cowboy Butter Salmon immediately, spooning any extra sauce from the pan or grill over the top.
