Cranberry-Orange Curd Tart

  • 1 cup sugar
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 4 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1 pre-baked tart shell

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine cranberries, sugar, orange juice, and orange zest. Cook over medium heat until cranberries burst.
  3. In a bowl, whisk together eggs and add the cranberry mixture.
  4. Strain the mixture to remove skins and seeds.
  5. Return the mixture to the saucepan, add butter, and cook until thickened.
  6. Pour the curd into the pre-baked tart shell.
  7. Bake for 15-20 minutes until set.
  8. Let cool before serving.
