Creamy Spinach Mushroom Pasta Bake

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente.
  3. In a skillet, heat olive oil over medium heat and sauté garlic and mushrooms until tender.
  4. Add spinach and cook until wilted.
  5. In a large bowl, combine cooked pasta, sautéed vegetables, heavy cream, and half of the shredded cheese. Season with salt and pepper.
  6. Transfer the mixture to a baking dish and top with remaining cheese and Parmesan.
  7. Bake for 25-30 minutes or until the top is golden and bubbly.
  8. Let it cool for a few minutes before serving.
