Creamy Taco Soup

A delicious and creamy taco soup that combines the flavors of traditional tacos in a comforting soup form.

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream and shredded cheese until melted and combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro.

  • For a spicier soup, add jalapeños or hot sauce.
