1 pre-made pie crust
2 cups heavy cream
1 cup whole milk
1 cup granulated sugar
6 large egg yolks
1 tablespoon vanilla extract
1/4 cup brown sugar (for topping)
Instructions
Preheat the oven to 350°F (175°C).
In a saucepan, combine heavy cream, whole milk, and granulated sugar. Heat over medium until sugar dissolves.
In a bowl, whisk together egg yolks and vanilla extract.
Slowly pour the warm cream mixture into the egg yolks, whisking constantly to prevent curdling.
Pour the mixture into the pre-made pie crust.
Bake for 30-35 minutes or until the filling is set but still slightly jiggly in the center.
Let the pie cool, then refrigerate for at least 4 hours or overnight.
Before serving, sprinkle brown sugar evenly over the top and use a kitchen torch to caramelize the sugar until golden and crispy.
