Crockpot Lasagna Soup

A warm and comforting Crockpot Lasagna Soup that combines all the flavors of traditional lasagna in a hearty soup form, perfect for a cozy dinner.

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth
  • 2 cups water
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a skillet, brown the ground beef with chopped onion and minced garlic until fully cooked.
  2. Transfer the beef mixture to the crockpot.
  3. Add crushed tomatoes, beef broth, water, Italian seasoning, salt, and pepper to the crockpot.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles.
  6. Once the noodles are cooked, stir in the ricotta cheese and half of the mozzarella cheese.
  7. Serve hot, topped with remaining mozzarella and Parmesan cheese.

  • Feel free to add vegetables like spinach or bell peppers for extra nutrition.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
