Easy Garlic Butter Steak Bites & Sweet Potato Mash

  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup milk (or dairy-free alternative)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, boil sweet potatoes until tender, about 15-20 minutes.
  2. While the sweet potatoes are cooking, heat olive oil in a skillet over medium-high heat.
  3. Season steak bites with salt and pepper, then add to the skillet and cook until browned, about 3-4 minutes.
  4. Add minced garlic and butter to the skillet, stirring to coat the steak bites.
  5. Drain the sweet potatoes and mash them with milk, salt, and pepper until smooth.
