Easy & Healthy Chicken and Sweet Potato Bowls

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, and any additional spices you prefer.
  5. In a skillet over medium heat, cook the chicken for 6-7 minutes on each side until fully cooked.
