  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups mixed vegetables (peas, corn, green beans)
  • 3 cups vegetable broth

  • 1 teaspoon dried rosemary
  • 1/4 cup all-purpose flour
  • 1 pie crust (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  3. Add mixed vegetables, vegetable broth, thyme, rosemary, and flour. Stir until well combined and thickened.
  4. Season with salt and pepper to taste.
