A comforting and easy-to-make white chicken chili that is perfect for warming up on a chilly day.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the shredded chicken, white beans, green chilies, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in the sour cream and cheese until melted and combined.
  5. Serve hot, garnished with additional cheese or cilantro if desired.

Notes

  • For a spicier chili, add jalapeños or cayenne pepper.
  • This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Freezes well for up to 3 months.
