1 cup eggnog
1/2 cup heavy cream
1/4 cup sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 large egg yolks
Whipped cream for topping
Instructions
Preheat the oven to 350°F (175°C).
Place the pie crust in a pie dish and bake according to package instructions until golden brown.
In a saucepan, combine eggnog, heavy cream, sugar, cornstarch, vanilla extract, nutmeg, and salt. Whisk until smooth.
Heat the mixture over medium heat, stirring constantly until it thickens.
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot eggnog mixture to the yolks to temper them, then stir the yolk mixture back into the saucepan.
Continue to cook for another 2-3 minutes, then remove from heat.
Pour the filling into the baked pie crust and let it cool to room temperature.
Refrigerate for at least 4 hours or until set.
Top with whipped cream before serving.
Notes
For a stronger eggnog flavor, use spiced eggnog.
