Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup pumpkin puree
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup kale, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add vegetable broth, diced tomatoes, pumpkin puree, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add kale and chickpeas; cook for an additional 10 minutes.
  7. Adjust seasoning if necessary and serve hot.

Notes

  • Feel free to add other vegetables like potatoes or zucchini.
  • This soup can be made ahead and stored in the fridge for up to 3 days.
  • For a creamier texture, blend part of the soup before adding the kale and chickpeas.
