Start your morning with this delicious and easy-to-make English Muffin Breakfast Pizza, topped with eggs, cheese, and savory breakfast sausage. Perfect for a quick and satisfying breakfast or brunch.
2 English muffins, split in half
4 large eggs
4 breakfast sausage links, casing removed and crumbled
1/2 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
2 tablespoons chopped green onions
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
Preheat the oven to 375°F (190°C).
Place the English muffin halves on a baking sheet, cut side up.
In a medium skillet, heat olive oil over medium heat. Add crumbled breakfast sausage and cook until browned and cooked through, about 5 minutes. Remove from skillet and set aside.
In the same skillet, add diced red and green bell peppers and sauté for 2-3 minutes until slightly softened. Remove from heat.
Crack one egg into a small bowl. Carefully pour the egg onto each English muffin half, keeping the yolk intact.
Sprinkle cooked sausage evenly over each English muffin half.
Distribute sautéed bell peppers on top of the sausage.
Sprinkle shredded mozzarella and cheddar cheese evenly over each muffin half.
