Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Add in the shredded cheese, chopped spinach, diced bell peppers, salt, and pepper. Mix until evenly distributed.
  4. Grease a muffin tin or use silicone molds.
  5. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the tin. Serve warm or store in the refrigerator for later.
