Fudgy Chocolate Zucchini Brownies

  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the grated zucchini, sugars, oil, eggs, and vanilla extract.
  3. In another bowl, combine the cocoa powder, flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before cutting into squares and serving.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • Store leftovers in an airtight container for up to 3 days.
  • These brownies can be frozen for up to 2 months.
