"Get Well Soup" with Onion and Garlic

A comforting and nutritious soup designed to aid recovery, featuring the healing properties of onion and garlic.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups chopped vegetables (carrots, celery, etc.)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cooked noodles (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Add vegetable broth and bring to a boil.
  5. Add chopped vegetables and thyme, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. If using, add cooked noodles just before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • Feel free to add any other vegetables you have on hand.
  • For a spicier version, add a pinch of red pepper flakes.
