Gingerbread Cheesecake Cookies

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  7. Drop spoonfuls of cookie dough onto a baking sheet, then make a small indentation in the center of each cookie.
  8. Fill the indentation with a small amount of the cream cheese mixture.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For a stronger ginger flavor, add more ground ginger.
