  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 2 cups powdered sugar (for royal icing)
  • 2 tablespoons meringue powder (for royal icing)
  • Water (for royal icing)

Instructions

  1. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add molasses and egg to the butter mixture and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Cut out shapes using cookie cutters and place them on a baking sheet.
  9. Bake for 8-10 minutes or until the edges are firm.
  10. Let the cookies cool completely before decorating with royal icing.
  11. To make royal icing, mix powdered sugar, meringue powder, and water until smooth.
  12. Decorate the cooled cookies with royal icing as desired.

  • Store cookies in an airtight container to keep them fresh.
  • Royal icing can be colored with food coloring for festive designs.
  • For a softer cookie, reduce baking time slightly.
