1 package of pie crusts (2 crusts)
2 cups fresh blueberries
1/2 cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1 egg (for egg wash)
Powdered sugar (for dusting)
Instructions
Preheat the oven to 375°F (190°C).
In a saucepan, combine blueberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens.
Roll out the pie crusts and cut them into ghost shapes using a cookie cutter.
Place a spoonful of the blueberry filling on one half of each ghost shape.
Fold the other half over and seal the edges with a fork.
Brush the tops with egg wash.
Bake for 20-25 minutes or until golden brown.
Let cool and dust with powdered sugar before serving.
Notes
Make sure to seal the edges well to prevent the filling from leaking out.
These can be made ahead of time and stored in an airtight container.
Feel free to use frozen blueberries if fresh ones are not available.
