Halloween Crockpot Pumpkin Chili

A delicious and festive pumpkin chili perfect for Halloween gatherings.

  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, green onions

Instructions

  1. In a crockpot, combine pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth.
  2. Add chopped onion, minced garlic, chili powder, cumin, paprika, salt, and pepper.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve hot with optional toppings if desired.

Notes

  • This chili can be made a day in advance and reheated.
  • Adjust spices according to your heat preference.
  • For a meatier version, add cooked ground turkey or beef.
