Halloween Eyeball Pasta Salad

A spooky and delicious Halloween-themed pasta salad that features eyeball-shaped mozzarella balls and a mix of colorful vegetables.

Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup black olives, sliced
  • 1 cup mozzarella balls (bocconcini)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Red food coloring (optional)

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, black olives, and chopped basil.
  3. In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. For the eyeballs, use mozzarella balls and place a slice of black olive on top of each to resemble an eye.
  6. If desired, add a few drops of red food coloring to the salad for a bloody effect.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or cucumbers for extra crunch.
  • This salad can be made a day in advance for convenience.
