  • 4 bell peppers (orange, green, or yellow)
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix together the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into the hollowed-out bell peppers.
  5. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
  8. Let cool slightly before serving.
