1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup powdered sugar
1/2 cup cream cheese, softened
1 teaspoon vanilla extract (for filling)
Food coloring (optional, for decoration)
Instructions
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, and mix until just combined.
Drop spoonfuls of batter onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes or until a toothpick inserted comes out clean. Let cool completely.
In a bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth to make the filling.
Spread or pipe the filling onto the flat side of one pie and top with another pie to create a sandwich.
Decorate with food coloring or sprinkles as desired.
