Healthy Roasted Garlic Mascarpone Mashed Potatoes

A creamy and flavorful twist on traditional mashed potatoes, enhanced with roasted garlic and mascarpone for a healthy side dish.

  • 2 pounds of potatoes
  • 1 head of garlic
  • 1/2 cup mascarpone cheese
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the head of garlic in aluminum foil and roast in the oven for 30-35 minutes until soft.
  3. Peel and chop the potatoes, then boil them in salted water until tender.
  4. Drain the potatoes and return them to the pot.
  5. Squeeze the roasted garlic cloves into the potatoes.
  6. Add mascarpone cheese, milk, and olive oil to the potatoes.
  7. Mash until smooth and creamy, then season with salt and pepper to taste.
  8. Serve warm and enjoy!
