Healthy Spanish garlic soup, Sopa de Ajo

A flavorful and nutritious Spanish garlic soup, known as Sopa de Ajo, that serves as a delicious remedy for various ailments.

Ingredients

  • 6 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of diced tomatoes
  • 1 teaspoon of smoked paprika
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 2 large eggs
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Stir in the diced tomatoes and smoked paprika, cooking for another 2-3 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 10 minutes.
  6. Season with salt and pepper to taste.
  7. Crack the eggs into the soup and let them poach for about 3-4 minutes.
  8. Serve hot, garnished with fresh parsley.
